MODERN RESTAURANT TECHNOLOGIES AS A FACTOR OF THE COMPETITIVENESS OF HOTEL ENTERPRISES

Introduction. In the modern conditions of the hospitality industry development, innovative technologies are becoming a key factor in ensuring the competitiveness of hotel enterprises. The integration of restaurant technologies into hotel service systems is of particular importance, as food services significantly shape the overall guest experience and influence customer satisfaction. Digitalization, automation of processes, and the implementation of advanced cooking and service technologies are crucial drivers of industry development.
Purpose. The purpose of the article is to study the impact of modern restaurant technologies on the competitiveness of hotel enterprises and to substantiate the directions for improving their efficiency through the implementation of innovative solutions.
Materials and methods. The research is based on general scientific and special methods, including analysis and synthesis, generalization, comparative analysis, system approach, as well as statistical and logical methods. The information base includes recent scientific publications of domestic and foreign scholars, analytical reports, and materials of international organizations in the field of hospitality.
Results. The main types of restaurant technologies used in hotels are identified, including production, digital, analytical and smart technologies. It is proven that their implementation contributes to the optimization of business processes, cost reduction, improvement of service quality and customer satisfaction. International and domestic experience in using innovative solutions is analyzed, which allowed to establish the effectiveness of integrating restaurant and hotel systems into a single digital ecosystem. It is substantiated that the use of modern technologies is an important factor in the formation of sustainable competitive advantages of enterprises.
Discussion. Further research consists in developing models for assessing the effectiveness of the implementation of restaurant technologies, studying the impact of artificial intelligence on the guest experience, as well as adapting international experience in digitalization to the conditions of operation of hotel enterprises in Ukraine.
